Catherine holds a dual appointment as a Research Fellow in the Department of Medicine at the University of Otago Christchurch, and an Expert Inflammatory Bowel Disease dietitian at Christchurch Hospital, New Zealand.

From 2017-2019 Catherine was a Research Fellow in the Department of Nutritional Sciences, King’s College London, United Kingdom. Her research aims to improve our knowledge about food and nutrition in the management of IBD and improve access to IBD dietitians and dietary IBD treatments.

Catherine and her colleagues at King’s College London have developed an electronic nutrition screening tool to help healthcare professionals and people living with IBD determine whether an appointment with a dietitian would be helpful.
